Super Berry Smoothie

Whizz the berries, yogurt and milk together with until smooth. Stir through the porridge oats and serve with a drizzle of honey

  • 450g frozen berries
  • 450g pot fat-free strawberry yogurt
  • 100ml milk
  • 25g porridge oats

Tangy Tomato Salsa

Combine 6 medium tomatoes, 1/2 red onion, 1 garlic clove , a drop of white wine vinegar, 1/2 a lime juiced and 1/2 a bunch of coriander. Blitz and then refrigerate until ready to serve.

Butternut Squash & Lentil Soup

  • Fry 2 onions with a pinch of salt for 7 mins, or until softened and just caramelised. Add 2 garlic cloves, 1/4 tsp chilli powder and 1 tbsp of ras el hanout, and cook for 1 min.
  • Stir in 1 chopped squash and 100g lentils. Pour over 1L of vegetable stock and season to taste. Bring to the boil, reduce the heat to a simmer and cook, for 25 mins or until the squash is soft. Blitz the soup until smooth, then season to taste.
  • Stir in coriander leaves and ladle the soup into bowls. Serve topped with natural yogurt and extra coriander.

Sticky BBQ Sauce

  • Heat 1 tbsp of oil in a saucepan and add 1 onion. Cook over a gentle heat 4-5 mins, until softened.
  • Add 400g of chopped tomatoes, 3 garlic cloves, 85g brown sugar, 3 tbsp malt vinegar, 1 tbsp of tomato puree, 2tbsp of Worcestershire Sauce, season and mix.
  • Bring to the boil, then reduce heat and simmer for 20-30 mins, until thickened. Whizz the mixture in the jug blender for a few seconds and pour over chicken wings or into a bowl to serve.
